Pumpkin Apple Take Along
This is the perfect naturally nutritious, delicious and ambiguous dish to take along to your next event. Did I mention easy? Oh and cheap? This is the cousin to that overly decadent sweet potato casserole. You know the one with all that butter, sugar and marshmallows that ends up as junk in the trunk. The inside of those Halloween pumpkins that you turned into Christmas decorations are still good to eat!!! Don't throw them away....serve them : )
Makes 8x8 Casserole
*Multiply as desired
1/2 Medium Pumpkin
4 Apples
1 Tblsp. Butter
2-3 Tblsp Brown Sugar
Crack of Salt
Cinnamon to taste
1. Butter casserole dish leaving remaining butter in the pan
2. Peel and chop pumpkin and apples. Toss into the casserole dish
3. Sprinkle Sugar, 1 crack of salt & cinnamon to taste.
Bake at 375 until soft
