Healthy Turkey Throw Together
I didn't have a plan. I often don't. I loved how this came out. I wanted something resembling the flavors of my moms meat pie filling. The ingredients of this couldn't be more different, but it hit the exact spot this prego lady wanted without the extra work or calories. Here it is! Make it in a pinch.

1lb. Ground Turkey
1 Large Diced Onion
1 Diced Tomato
1 Apple
2 Small Diced Summer Squash
3-4 Collard Leaves Rolled and Chopped
2 Shakes of Chile Powder
Black Pepper to Taste
Salt
Garlic Powder
Fennel Seed
Blue Cheese Crumbles
Olive Oil to coat pan...once.
Brown Rice
Here is how you do it.
Dice it,
1. Saute the onions, apple and squash in lightly oiled pan until almost tender. Add a little water instead of additional oil if needed.
2. Push the saute medley to the edges of the pan and put the ground turkey in the center. Add seasoning and saute until cooked through keeping it separate from the squash medley.
3. Once the turkey is cooked mix it all together and add tomato and collards.
4. That's it. It's done. Serve with brown rice and top with blue cheese crumbles.
