Unwrapped Spring Rolls
This is a dish that I always request from my Thai sister in law. Well actually we request spring rolls, but she says why spend all that time and we can just eat it in the bowl. So that's what we do. This isn't quite exact, because I'm just stealing what my eyes can see and my taste buds can detect.
1 Shredded Cucumber
1 Shredded Carrot
1 can chopped water chestnuts
1/8 bunch Chopped Cilantro
1/8 bunch Chopped Mint
2 Chopped Scallion
1 Tblsp. Siracha Drizzle
1 Tblsp. Honey/Agave Drizzle
1/4 Sliced Avocado
Amounts will vary depending on the size you want. These amounts are for 1 serving more or less. I'd make more, because you will want it.
Sliced Mango (Optional)
Crushed Peanuts (Optional)
Lean protein (Optional)
Rice noodles or Miracle Noodles (Optional)
Here is how it's done.
1. Chop or shred all the listed veggies and greens
2. Toss together in a bowl, or if you liked the wrapped experience try using bib lettuce to eat it like a lettuce wrap.
3. Drizzle with Honey & Siracha. To dress you can blend up 1/8th avocado 1/8th mango and Siracha with water and toss for an alternative faux chili sauce.
